Today on the destination dishes series we are turning our attention to Little Rock Arkansas with a melting pot cheese dip recipe.

The recipe is from the super popular Heights Taco & Tamale Co, a trendy spot in Little Rock that serves up Mexican-Southern fusion fare.

Their dishes are rooted in Mexican and Tex-Mex cuisine and are created with local and seasonal Arkansas culinary influences.

Little Rock is a rather surprising culinary destination in the south. Arkansas’s capital manages to mix the best of southern cuisine with innovative places to eat and impressive microbreweries.

The city has a huge range of award-winning restaurants, independent cafes and happening bars to choose from.

You can definitely spend a good few days eating and drinking your way around town and hardly scratch the surface.

Making Little Rock cheese dip

The award-winning cheese dip by Heights Taco and Tamale is inspired by the original recipes of Little Rock, Arkansas’s five most legendary Cheese Dips.

Their Families Cheese Dip took home first place in the World Cheese Dip Championship Festival in 2016.

Cheese dip is kind of a big deal in Arkansas and is not to be confused with queso, which is a popular cheese dip in Texas.

Difference between cheese dip and queso

The main difference between Arkansas cheese dip and Texan queso is consistency.

While queso clumps as it cools, cheese dip stays dippable because it combines natural cheese with processed cheese.

Arkansas takes cheese dip so seriously that the Arkansas Department of Parks and Tourism actually encourages tourists to travel the Cheese Dip Trail.

They have assembled a Google map with 19 stops at restaurants across the state where cheese dip is served.

Little Rock Cheese Dip Recipe

The “Five Families” cheese dip is a literal melting pot of Arkansas’s cheese dip heritage.

This beloved dip draws inspiration from central Arkansas’s five most legendary cheese dips.

Including one crafted by Executive Chef and owner Scott McGehee’s father, who was also a chef and restaurateur in Arkansas.

The Five Families Cheese Dip reaches peak cheesiness and ‘dip-ability’ with a tasty blend of 4 kinds of cheese.

Little Rock Cheese Dip Recipe

Five Families Cheese Dip ingredients

To make this tasty dip, you start by balancing the base flavours of the dip with a combination of Semi-Soft Jack Cheese.

This brings a buttery-ivory colour and mild flavour to the recipe and Sharp Cheddar Cheese which offers a tangy, ‘cheddar bite’ and warmer gold colour.

Next, the ‘dippable’ factor is perfected by both adding white and yellow ‘smooth melt’ kinds of cheese.

Each of these creamy, rich, dairy cheeses melts evenly and consistently ensuring no clumping. The dip should be served piping hot in a cast-iron dish and with tortilla chips.

Whilst the exact recipe by Scott McGehee of Heights Taco & Tamale Co is kept a secret, here’s how you can make a version of it at home.

Ingredients

  • 3lb Yellow Smooth Melt Cheese

  •  3lb White Smooth Melt Cheese

  • 1lb Shredded Cheddar

  • 1lb Shredded Jack Cheese

  • Gallon of milk

  • 1 cup of of minced garlic

  • 1 minced medium Chipotle Pepper

  • 3 Tablespoons Ground Cumin

  • 2 Tablespoons Dark Chili Powder

  • 2 Tablespoons New Mexican Red Chile Powder

  • 1 Tablespoon Ground Black Pepper

  • 2 teaspoons Salt

  • 3 cups Green Chilies, Roasted Peeled Seeded and Diced

  • 1 Cup Cholula Hot Sauce

  • 1 Medium Jalapeño, Thin Sliced

Arkansas cheese dip recipe

Directions

  • Combine all ingredients in a double boiler with simmering water or slow cooker on a low setting.
  • Melt cheese, stirring as necessary to fully incorporate all ingredients.
  • Stir until dip reaches a temperature of 160 degrees.
  • Serve immediately with tortilla chips or refrigerate for later.
