Finnish Salmon Soup Recipe | Destination dishes series

Today on the destination dishes series we are turning our attention to Finland with a Finnish Salmon Soup recipe.

In this ongoing food series, you’ll learn how to cook some of my favourite dishes from destinations around the world.

Finnish food can often be stereotyped as just consisting of pickled foods, reindeer and herring.

Finns actually use lots of fresh and local produce to create delicious and contemporary dishes.

Finnish cuisine features a lot of fresh, seasonal ingredients to create a range of traditional and regional specialities, that are often locally-sourced and organic.

Typical Finnish foods include Ruisleipä [rye bread], Mustikkapiirakka (blueberry pie) Poronkaristys (sauteed reindeer) and Lohikeitto [salmon soup].

Whilst these Finnish dishes can sound a little intimidating to make, some of them are easier to create at home than others.

Making Salmon soup

One of the easier Finnish dishes to recreate at home is Salmon soup, known locally as ‘Lohikeitto.

This dish is popular in the Lapland region of Finland, where it features on most restaurant menus.

The proper Finnish way to enjoy salmon soup is on a wintery night, eaten with a side of dark rye bread.

This simple soup is deliciously creamy and full of flavour. In addition to salmon, this Finnish soup often contains cream, potatoes, carrots, and leeks.

Finnish Salmon Soup Recipe

Finnish salmon soup is an easy dish to prepare, using simple ingredients such as salmon, potatoes and vegetables.

You can enhance the broth by adding cream to give it a richer and fuller flavour. Dill can also be added to give a splash colour and additional flavour.

Whilst this warming soup is traditionally a winter dish, it can be made year-round to bring a taste of Finland to your home.

Here is my take on the classic salmon soup, using easily sourced ingredients and an easy to follow method.

Ingredients

  • 2 small salmon fillets cut into chunks

  • 3 pototes cut into cubes

  • 1 half leek sliced

  • 30ml double cream

  • 2 small carrots sliced

  • 1 stick of celery sliced

  • 1 onion, thinly sliced

  • Fish or chicken stock cube

  • Small amount of chopped dill and flat parsley

Directions

  • Heat 1 tbsp of butter in a medium-sized pot, then add the sliced leek, celery and onion. Cook until soft.
  • Add 750ml of boiling water to fish or chicken stock cube.
  • Put the stock into the pot along with the potatoes and carrots. Cover the pot with a lid and bring to a boil.
  • Simmer for around 15 minutes, then add the salmon and cream and cook for another 3-5 mins.
  • Divide soup into bowls, season with salt and pepper. Then add a small amount of chopped dill and flat parsley on top, to garnish.
  • Serve with rye bread or rustic bread and white wine.
